Sometimes we need a quick, no-fuss meal that tastes great, but we don’t necessarily have the time to make it all from scratch. As a busy working mom, I get it! Ingredients
  

  • 1 package Piedmont BBQ Beef Barbacoa
  • 2 cups cooked white rice
  • 1 cup corn, drained
  • 1 cup black beans, drained and rinsed
  • 1 red pepper, diced
  • 1 avocado, diced
  • 1 lime, cut into wedges

Optional: Cilantro-Lime Crema

  • ½ cup fresh cilantro, washed and dried
  • 1 clove garlic
  • juice from 1/2 lime
  • 1 tsp honey
  • ¼ tsp sea salt
  • ¾ cup plain yogurt

Instructions
 

  • Bring a large pot of water to boil.
  • Place the entire bag of frozen beef barbacoa in the boiling water for 15 minutes.
  • While the water is boiling, prepare the rice and cut the veggies.
  • If you are making the optional crema, combine all ingredients in a blender until incorporated. Set aside.
  • To assemble the bowls place rice on the bottom of each bowl, top with black beans, corn, avocado, peppers and beef barbacoa. Squeeze with lime juice and top with cilantro-lime crema (optional)
