Preheat oven or air fryer to 400 degrees.
In a large bowl, toss the cauliflower florets with olive oil and salt.
Place on air fryer basket (you’ll need o do two batches), or on a parchment lined sheet pan.
Roast for 20 minutes, or until the edges of the cauliflower turn golden brown.
While the cauliflower is roasting, make the sauce. In a bowl, whisk together the mayo, sweet chili sauce, sriracha, and rice vinegar.
When the cauliflower is done, take half of the sauce out of the bowl and set it aside. Add the cauliflower to the remaining sauce and toss it gently until the pieces are coated.
Assemble your lettuce wraps by placing coated cauliflower on top of a lettuce leaf. Garnish with cucumbers, pickled red onions, and chives. Drizzle with extra sauce if you like, because it’s BANGIN’.
