Ingredients
For the Cake:
- 3 cups all purpose OR gluten-free flour (I actually made this with gluten-free flour!)
- 1 ½ tsp baking soda
- ¾ tsp salt
- 1 ½ tsp cinnamon
- ½ tsp nutmeg
- ¾ cup butter melted and cooled slightly
- 1 cup packed brown sugar
- ¾ cup sugar
- 3 eggs room temperature
- 1 ½ cups greek yogurt room temperature
- 4 ripe bananas mashed (~ 2 ¼ cups)
- 1 ½ tsp vanilla extract
- ½ tsp almond extract
- ¾ cup mini chocolate chips
For the Crumb Topping:
- 2 ¼ cups gluten-free flour
- 1 ½ tsp cinnamon
- ½ cup sugar
- ¼ tsp sea salt
- ½ cup brown sugar
- ¾ cup salted butter melted
- ½ cup mini semi-sweet chocolate chips
Instructions
- Preheat the oven and prepare the pan:
- Preheat the oven to 350F. Grease and line an 8x8” baking pan with parchment paper. Set aside.
- For the Crumb Topping:
- Combine the flour, cinnamon, and sugars into a bowl. Mix in the melted butter until the mixture resembles wet sand. Then, mix in the chocolate chips. Place into the refrigerator to chill while you make the rest of the cake.
- For the Cake:
- In a large bowl, whisk together the flour, baking soda, salt, and cinnamon. Set aside.
- In a medium bowl,whisk together the melted butter and sugars.
- Add in the eggs, yogurt, mashed bananas, vanilla and almond extract. Whisk until well combined.
- Add the dry ingredients to the wet, and mix just until combined.
- Pour the batter into the prepared pan.
- Sprinkle the top with the crumble.
- Bake for 55-65 mins, until golden and a toothpick inserted into the middle comes out clean. If the cake starts to brown too much before finished, tent the pan with foil in the last 15 mins of baking.
- Remove the cake from the oven and let cool in the pan for 30 minutes.
- Cut into 16 squares.
