  • ½ cup Panko
  • 2 tbsp lukewarm water
  • 2 tbsp chimichurri (recipe linked above) or store-bought is fine!
  • 1 pound ground beef
  • 1 large egg
  • 1 small yellow onion, finely minced
  • 1 clove garlic, minced on microplane
  • 1 tsp salt


  • Preheat oven to 350 degrees and line a sheet pan with parchment paper.
  • Mix together the breadcrumbs and water and set aside.
  • Then combine the chimichurri, beef, egg, cheese, onion, garlic and salt.
  • Using your hands, mix the ingredients together. Blend the bread crumb mixture into the meat mixture.
  • Shape into 1-inch balls.
  • Rub a little olive oil on the prepared sheet pan and place the meatballs in a single layer.
  • Bake for 20 minutes, until fully cooked.
