Apple Pie Empanadas

These sweet empanadas are a delicious fall treat. If you don’t have time to make your own dough, you can always buy pre-made empanada rounds. Finish these off with a sprinkle cinnamon sugar or caramel glaze! Yum! Check out some more of my favorite fall recipes!

For the Dough

  • 3 cups all-purpose flour
  • ¼ tsp salt
  • 6 oz unsalted butter (12 tbsp)
  • 1 egg
  • 1/4 cup to 1/2 cup of water or milk adjust as needed to obtain a soft and smooth dough

For the Filling:

  • 2 oz butter
  • 4 large granny smith apples, peeled , small dice
  • 6 oz granulated sugar
  • 2 oz brown sugar
  • 2 tsp. lemon juice
  • 1 tsp. pure vanilla extract
  • ½ tsp. ground cinnamon
  • Pinch nutmeg
  • Pinch of salt
  • 3 tbsp cornstarch
  • 1 egg for egg washing empanadas
  • 1 tbsp sugar + 1/4 tsp cinnamon for sprinkling


  • Mix the flour and salt in a food processor.
  • Add the butter and pulse
  • Add the egg and the water or milk and continue pulsing until a clumpy dough forms.
  • Split the dough into 2 large balls, flatten slightly into the shape of disks. The dough can be used immediately or refrigerated until ready to use (1-2 days max).
  • For the filling: In a medium saucepan over medium heat, melt butter. Add apples, sugar, brown sugar, lemon juice, vanilla, cinnamon, nutmeg and salt. Cook, stirring occasionally, until apples are soft, about 10 minutes. Add cornstarch and cook, stirring, until thickened, 1 minute more. Transfer to a medium heatproof bowl and let cool to room temperature.
  • Roll out the dough into a thin sheet and cut out round disc shapes for empanadas (use round molds or a small plate).
  • Preheat oven to 375 F.
  • Place spoonfuls of the apple pie mixture in the middle of each dough circle, dividing the mixture evenly between the empanadas.
  • Brush some egg wash around the edge of the circle and then fold and seal the empanadas
  • Place empanadas on a parchment lined baking sheet and brush empanadas carefully with the egg wash. Sprinkle with cinnamon sugar
  • Bake empanadas for 10-30 minutes ( depending on their size), or until puffed and golden brown.
