In a small saucepan, heat the apple cider. When it is simmering add the raisins and baking soda. Turn off the flame and set aside to cool.
In a medium bowl, whisk together the flour, baking powder, salt and cinnamon.
In another medium bowl, whisk together the sugars, applesauce, eggs, coconut oil/butter, and vanilla.
Pour the wet ingredient into the dry. Mix gently a few times and then pour in the cooled apple cider mixture. Mix just until combines.
Fold in chocolate chips.
Divide evenly among 12 muffin cups.
Bake for 12-15 minutes. Allow to cool fully before removing muffins from muffin tin.
