Ingredients
  

  • ¾ cup apple cider
  • ½ cup raisins
  • ¾ teaspoon baking soda
  • ¼ cup sugar
  • ¼ cup brown sugar
  • ½ cup applesauce
  • 2 eggs, room temperature
  • ½ cup melted coconut oil or butter
  • ½ tsp vanilla extract
  • 1 ½ cups flour
  • ½ tsp baking powder
  • ¼ tsp sea salt
  • 1 tbsp cinnamon
  • ½ cup mini chocolate chips

Instructions
 

  • Preheat oven to 350 degrees. Line a muffin tin with liners. Set aside,
  • In a small saucepan, heat the apple cider. When it is simmering add the raisins and baking soda. Turn off the flame and set aside to cool.
  • In a medium bowl, whisk together the flour, baking powder, salt and cinnamon.
  • In another medium bowl, whisk together the sugars, applesauce, eggs, coconut oil/butter, and vanilla.
  • Pour the wet ingredient into the dry. Mix gently a few times and then pour in the cooled apple cider mixture. Mix just until combines.
  • Fold in chocolate chips.
  • Divide evenly among 12 muffin cups.
  • Bake for 12-15 minutes. Allow to cool fully before removing muffins from muffin tin.
