Trim the fat off of the pork shoulder and slice in half lengthwise (this way it will cook quicker.) Season generously with 1 tbsp kosher salt.
Heat a cast iron pan over high heat until is it very hot. Add 1 tbsp avocado or vegetable oil and then add the pork shoulder halves
Sear on each side for 3-4 minutes until golden brown.
Add the seared pork, apple cider, soy sauce, apple cider vinegar, garlic and chicken stock to the slow cooker.
Cook on low for 8 hours until the pork is fork tender.
Remove the liquid and reduce to make an extra flavorful sauce, or simply drizzle the sauce over the pork before serving.
Garnish with scallions and serve with your choice of sides.
