Apple Cheddar Scallion Biscuits

For me, apple picking officially marks the beginning of fall. I love being outside in the warm sunshine, climbing apple trees and collecting the best apples for fall baking. I don’t do much baking in the summer because of the heat, so I get super excited when fall arrives. My love of cooking started with baking so it is kind of sentimental to me. I came up with this recipe because I have so many scallions from my local CSA (Shout out to City Green!) I decided I wanted to make cheddar scallion biscuits, but with a fall twist. These sweet and savory biscuits taste great topped with some honey butter. Enjoy!

  • 2 cups all purpose flour, plus more as needed
  • 1 tablespoon baking powder
  • 1 ¾ teaspoons sea salt
  • 14 tablespoons cold unsalted butter, diced
  • ½ cup cold buttermilk
  • 1 cold egg
  • 2 scallions, chopped
  • 1 ¼ cups shredded cheddar cheese
  • 1 cup honey crisp apple, small dice
  • 1 egg beaten with 1 teaspoon water
  • Coarse sea salt (optional)


  • Prepare a sheet tray with parchment paper. Preheat oven to 425 degrees.
  • Put 2 cups of flour, baking powder and salt in a food processor.  Pulse a few times to incorporate.
  • Add the butter, pulsing until the butter is the size of peas.
  • Combine the buttermilk and egg in a small measuring cup and beat lightly.  Add the scallions.
  • Slowly add the buttermilk mixture and pulse just until combined.  You do not want to over mix!
  • Now add the cheese, pulsing once or twice, again being careful not to over mix. Finally add the apples, and pulse once or twice, just to combine.
  • Dump the dough onto a floured surface and knead lightly about 2 times.  Roll the dough out into a square until it is about 2 inches thick. With a sharp, floured knife, cut the dough lengthwise in thirds and then across in thirds, making 9 squares. Transfer to a sheet pan lined with parchment paper.
  • Brush the tops and sides with the beaten egg and water mixture, then sprinkle lightly with some sea salt.
  • Bake for about 20 minutes, until the tops are golden and the biscuits are cooked through.
