
Aji Verde is hands-down my FAVORITE sauce. It is delicious on everything; from tacos, to roasted veggies, to grilled meat or roasted chicken. Basically, a dollop of aji verde makes even the simplest foods taste irresistible.
Ingredients
- 1 bunch fresh cilantro, tear the bottom half of the stems off the cilantro and discard or save for flavoring soup, stew, beans etc.
- 2 cloves garlic
- 1 serrano or jalapeño pepper, seeded
- ½ cup mayonnaise
- ¼ cup crumbled cotija or parmesan cheese
- 1 tbsp Aji Amarillo Paste* (If you can’t find this, just add another serrano)
- 1 tbsp lime juice
- ¼ tsp salt
Instructions
- Place all ingredients in the bowl of a food processor.
- Purée until the mixture is smooth. Add water, 1 tbsp at a time if it is too thick. Taste, then add salt, to taste if needed.
- *Aji Amarillo Paste is a key ingredient, as it makes the sauce authentic. It is a simple puree of Peruvian yellow chile peppers.
