You all know tacos are my favorite food….which is why I turn so many classic foods into tacos! This easy Air-Fryer Shrimp Po Boy Taco recipe takes everything you love about the New Orleans classic sandwich and adds a healthy twist by skipping the breading and using a tortilla instead of bread. While the shrimp is air-frying (or oven baking) you throw together some remoulade and slaw and you can have dinner on the table in 30 minutes. The flavorful shrimp are tossed with homemade Cajun seasoning, so you can double or triple the recipe and then use it for my One-Pot Creamy Cajun Pasta! Looking for more taco recipes?
