Ingredients
  

  • 1 lb chicken breast, pounded ¼ inch thin *you can slice chicken brreats in half lengthwise and then pound thin, or buy thinly sliced chicken breast.
  • 2 eggs
  • 1 cup unseasoned Italian breadcrumbs
  • 1 cup Panko
  • ½ cup Parmesan cheese
  • 2 tsp salt, divided
  • Cooking Spray or your choice of oil

Instructions
 

  • Preheat air fryer to 400 degrees.
  • Mix flour and ½ tsp salt in a shallow dish.
  • Whisk eggs in a second shallow dish
  • Combine breadcrumbs, panko, parmesan cheese and 1 ½ tsp salt in a third shallow dish.
  • Dredge each chicken breast in flour, tapping off any excess flour, then coat in egg, and finally cover in the breadcrumb mixture.
  • Press the breadcrumb mixture into the chicken on both sides firmly (this helps keep them crispy)
  • Generously spray both sides of each tender with cooking spray (or drizzle with oil) and spray the air fryer basket with cooking spray.
  • Add as many chicken cutletsas you can to air fryer (depending on air fryer basket size, tenders will need to be air-fried in batches).
  • Air fry for 5 minutes. Flip and continue to air fry for an additional 5 minutes or until chicken has cooked through and is golden brown on the outside.
