5 Minute Molten Chocolate Mug Cake

Do you need to perfect EASY Valentine’s Day dessert?  These 5-Minute Molten Chocolate Mug Cakes are exactly what you need! The best part is that you don’t need to be a skilled baker to whip these up. All you need is about 5 minutes, and you’ll have a gooey, molten chocolate cake that is pretty guilt-free!  These guiltless pleasures are sweetened with a very ripe banana and a little maple syrup… so no refined sugar and just ¼ cup of flour makes 2 servings.  Enjoy this personal-sized cakes warm with a scoop of ice cream or fresh whipped cream.

  • 1 very ripe banana, mashed 
  • 1 tbsp olive oil
  • 1 tbsp maple syrup
  • 1 egg
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract
  • 1/4 cup flour
  • 2 tbsps cocoa powder
  • 1/2 tsp baking soda
  • 1 Pinch of cinnamon
  • 1/4 tsp sea salt
  • 1 tbsp coffee or milk
  • 1/4 cup chocolate chunks


  • In a bowl, stir together the mashed banana, olive oil, maple syrup, egg, and vanilla until combined. 
  • Sift the flour, cocoa powder, baking soda, cinnamon, and salt into the wet mixture. Mix until just combined. Stir in the coffee or milk.
  • Fold in the chocolate chips/chunks.
  • Pour the batter into 2 (8 oz) microwave-safe ramekins.  Microwave one at a time for 1- 1.5 minutes (I always do 1 minute first, and check it. It is always better under "bake").
  • Eat immediately while it is warm and gooey!
