These 5 Ingredient Oatmeal Raisin Breakfast Cookies are quick and easy to make! If you are pressed for time on most mornings like I am, whip up a big batch of these on a weekend and freeze them. Then just pop them in the microwave for a few seconds and they taste like they were freshly baked! Of course, these oatmeal raisin breakfast cookies aren’t just for breakfast. Ingredients
  

  • 4 ripe bananas (about 2 cups mashed)
  • 2 egg whites (or 1 whole egg)
  • 2 cups quick oats
  • 2 scoops vanilla protein powder
  • ½ cup raisins
  • Optional: ¼ tsp sea salt, ¼ tsp cinnamon

Instructions
 

  • Preheat the oven to 350 F. Line a baking sheet with parchment paper.
  • Mash bananas until they just have a few small chunks.
  • Whisk in the egg whites until combined.
  • Add in oats and protein powder (salt and cinnamon are optional) and gently stir until fully combined and a thick dough forms.
  • Gently fold in raisins.
  • Using a portion scoop, scoop mixture and place on baking sheet about 1 to 2 inches apart. Press each scoop down lightly.
  • Bake for 10-13 minutes.
  • Remove from oven, let cool and serve.
